This is my adaptation of the Hungry Girl Baked Kale. I like to experiment with the different spices. You can cut out sodium by using a no salt spice blend (I love Mrs. Dash's chipotle blend), but some days I crave the salt... This is my adaptation of the Hungry Girl Baked Kale. Ingredients

2 cups fresh kale leaves
Olive oil nonstick spray
Dash garlic salt, or more to taste
Directions
Preheat oven to 425 degrees.
Place kale leaves on a baking sheet sprayed with olive oil nonstick spray. Spritz leaves with the nonstick spray and sprinkle with salt.
Bake in the oven until crispy, 5 - 8 minutes, for a potato-chip-like snack. (I recommend turning the chips halfway through the cooking process)
If you like, season to taste with additional salt. Eat up!

Baked kale chips have turned my husband into an enthusiastic kale eater. I like to serve the chips with toasted pumpkin seeds (just dry toast them in a pan) for a snack full of protein and nutrients. For variety, experiment with different seasonings: Old Bay or cumin & chili powder. - 4/6/11
