Tropical Tilapia

Ingredients

    1 Tbsp Coconut Oil
    1 Tbsp ginger root
    1/4 cup honey
    1/4 cup low-sodium soy sauce
    24 oz raw tilapia
    1 tsp garam masala
    1 tsp seafood seasoning
    8 oz pineapple, chunks
    1 large red onion, cut into wedges
    4 medium lime, zest two limes, juice all 4
    5 medium scallion

Directions

1. Preheat oven to 400 degrees. Place onion and pineapple on a baking sheet and roast for about 20 min.
2. Meanwhile, mix together spices and sprinkle onto each tilapia fillet. Line a baking sheet with parchment paper and place seasoned fish on top. Set aside.
3. In a small saucepan, combine soy sauce, honey, lime juice and zest, ginger and coconut oil. Heat over medium heat, stirring until mixture has thickened. Remove from heat and set aside.
4. Remove roasted onion and pineapple from the oven and scrape over fish. Spread soy sauce mixture over fish. Broil for 12 minutes and remove from heat. Garnish with about 5 chopped scallions (if desired).
