Italian Stuffed Shells

Number of Servings: 10

Ingredients

    *Ground turkey breast Extra Lean (Jennio-o), 16 oz
    Spinach, fresh, 4 cup
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 2 clove
    *Extra Virgin Olive Oil, 2 tbsp
    *Hunts Crushed tomatoes, 3.5 cup
    *Hunt's Tomatoes, Diced, No Salt Added, 1/2 Cup (121g) Serving, 2 cup
    Parmesan Cheese, grated, 1 cup
    *Low Fat Ricotta Cheese, 2 cup
    *Barilla Jumbo Shells - 5 shells, 5 serving
    Egg, fresh, 1 large
    Mozzarella Cheese, whole milk, 6 slices

Directions

Pasta Sauce:
1 T EVOO
1 med onion
2 cloves garlic
1 large can crushed tomatoes
1 can diced tomatos
Italian herbs
Fresh basil
-Sautee onion and garlic until opaque. Add tomatoes and herbs. Let simmer.

Turkey:
Brown turkey in 1 T EVOO
Add seasonings-dried basil, oregano, fennel seeds, red pepper flakes, parsley
Add 4 cups spinach and cook down

In bowl, combine parmesan cheese, ricotta, 1 egg and COOLED turkey mixture

Boil jumbo shells until al-dente

In 9 by 12 baking pan-
Ladle tomato sauce on bottom
Fill shells with 2 T of turkey/cheese mixture
Top with remaining tomato sauce and slices of fresh mozzarella
Bake in oven until cheese is bubble and dish is cooked through (approx 30 min)

Serving Size: makes approx 10 servings of 2 shells each
