Hearty 8-bean soup (H. Roth) - 2 cups

Ingredients

    3 2/3 c mixed beans
    3 quarts cold water
    1 large onion, chopped
    3 large carrots, chopped
    3 stalks celery, chopped
    1 bay leaf
    Few rains crushed red pepper (optional)
    1 28-oz can Italian plum tomatoes with juice, chopped
    2 T fresh basil or 1 1/2 tsp dried basil, crushed

Directions

Wash beans. Soak 1-2 hours or overnight. Place drained beans and other ingredients in 8-quart pot. Bring to boil. Reduce heat and simmer 2.5-3 hours. Add some chopped basil if desired.
