Garbonzo beans with a kick using a tons of great veggies without being boring in taste, texture or color. Nice for the hot weather... great to make in advance for lunches or side dishes. Ingredients

    1 can garbonzo beans (chickpeas)
    1 whole skinned/seeded avocado. cut into small chunks
    1 tsp cumin
    1/4 cup lemon juice
    1/2 cup celery, chopped
    4 Persian cucumbers, seeded, cut into chunks
    1 cup chopped tomatoes
    1 cup chopped red peppers
    2 Tbsp Olive Oil

Directions

Cut all vegetables into nice chunk pieces. Mix all ingredients in a bowl. You can eat it right away or store it for later.
