Parsnip-Spinach Cakes

Introduction

I had leftover roasted parsnips & sauteed braising greens so I turned them into veggie pancakes. I had leftover roasted parsnips & sauteed braising greens so I turned them into veggie pancakes.
Number of Servings: 6

Ingredients

    1.5 cups roasted parsnips
    1 cup sauteed greens
    1 large egg
    2 Tbsp flour
    1/3 cup bread crumbs
    2 Tbsp oil

Directions

Mash parsnips, add chopped spinach, egg & flour. Mix well.
Divide into 6 patties & dredge patties in bread crumbs.
Saute in oil until lightly browned.

Serving Size: Makes 6 pancakes
