Jason's Carrot Slaw

Ingredients

    2 tbsp. Lemon Juice
    2 tbsp. Olive Oil
    1 clove garlic, minced (or to taste)
    1/4 tsp. non-iodized salt (or to taste)
    1/4 tsp. freshly ground black pepper (or to taste)
    1 tsp. dried dill weed (or 1 tbsp. fresh)
    2 cups or 135g grated carrots
    2 tbsp. chopped scallions

Directions

Whisk olive oil, lemon juice, garlic, salt, and pepper until creamy. Add remaining ingredients and toss to coat.

Note: This definitely improves the longer it sits. It's good right away, and great after a night in the fridge!
