Chicken, Bean and Barley Soup

Ingredients

    12 cups Randall Deluxe Great Northern Beans, undrained
    12 ozs Chicken Breast (Cooked & Shredded)
    1 cup Barley, uncooked
    2 tbsp Olive Oil
    3 (14 oz) cans Chicken Broth,
    4 cup Water
    4 medium Raw Carrots, sliced or chopped
    1.25 cups Sweet Bell peppers (mixed colors) chopped
    1.5 cups Raw Celery, diced
    1 cup raw onion, Chopped
    1 Tbl Spice World Minced Garlic
    .25 cup fresh Parsley, chopped
    4 bay leaves
    1 tsp Kosher Salt
    1 tsp Thyme, Dried
    .5 tsp black pepper, coarse
    .5 tsp ground Cumin
    .25 tsp ground Curry
    .5 tsp Poultry Seasoning

Directions

Heat olive oil in a large pan that will hold at least 6 quarts. Add onions, carrots, peppers, celery, parsley, garlic and bay leaves. Cover and saute for 15 min at medium heat. Stir every five minutes.

Add remaining ingredients except Barley . Bring to a boil , stirring occasionally.

Remove the bay leaves and stir in the barley. Simmer for one hour until barley is cooked. Makes 20 cups. One serving is one cup.
