Ingredients

2 rainbow trout filets, 12 oz each
cooking spray
2 scallions, chopped
2 cloves garlic, minced
1 C shiitake mushrooms, stemmed and chopped
1/2 c cherry tomatoes, chopped
2 t grated fresh ginger 3 t soy sauce
2 t toasted sesame oil
cilantro (opt)
Directions
Preheat oven to 400. Cut filets into 2. Line baking sheet with foil and spray with Pam. Season fish with salt and pepper and place, skin side down, on sheet.
Mix scallions, mushrooms, tomatoes, ginger and garlic together in bowl. Sprinkle mixture over fish. Drizzle with soy sauce and sesame oil. Bake for 15-20 min or until fish is opaque. Sprinkle with cilantro before serving (opt).
Serving Size: Makes 4 6-oz servings
