2 rainbow trout filets, 12 oz each
2 scallions, chopped
2 cloves garlic, minced
1 C shiitake mushrooms, stemmed and chopped
1/2 c cherry tomatoes, chopped
2 t grated fresh ginger 3 t soy sauce
2 t toasted sesame oil
Mix scallions, mushrooms, tomatoes, ginger and garlic together in bowl. Sprinkle mixture over fish. Drizzle with soy sauce and sesame oil. Bake for 15-20 min or until fish is opaque. Sprinkle with cilantro before serving (opt).
