Nutty Wheat Bread

Number of Servings: 16
Ingredients

2 1/2 c. bread flour
1/3 c. wheat germ
3/4 c. unprocessed miller's bran
1/4 t baking soda
1 pkg. instant dry yeast (2 1/4 tsp)
3 Tbsp sugar
1/2 tsp salt
3 Tbsp potato flour (optional)
2/3 c. plain yogurt
2/3 c. hot water
Directions
Combine in mixing bowl and mix thoroughly
2 1/2 c. bread flour
1/3 c. wheat germ
3/4 c. unprocessed miller's bran
1/4 t baking soda
1 pkg. instant dry yeast (2 1/4 tsp)
3 Tbsp sugar
1/2 tsp sat
3 Tbsp potato flour (optional)
Add to mixing bowl and mix to form stiff dough. Ingredients need only to be combined. No extra mixing is needed.
2/3 c. plain yogurt
2/3 c. hot water
Line an 8 ½ x 4 ½” loaf pan with parchment paper. Put the dough in the lined pan. Brush the top with oil and cover with saran wrap. Let rise in the microwave at 10% power for 20 minutes. Bake at 375 degrees for 15 minutes, cover with foil and continue baking until the internal temperature of the loaf is 190 degrees (about 15 more minutes).
To keep extra bread mix on hand, line up empty zip lock bags and measure out the dry ingredients assembly line style into each of the bags. Store these in the refrigerator. Pull out one of the premeasured bags from the refrigerator and add water and yogurt to make a quick bread dough.
(It takes almost the same amount of time to measure out the ingredients for six bags as it does for one.)
