Introduction

Set up as a side dish but makes a delicious dinner when recipe is doubled (two servings is a great dinner size, even if you do 4 servings you are still under 250 calories!!) Number of Servings: 4

Ingredients

    1lb zucchini sliced thin
    8oz eggplant sliced thin
    2tbspn each of shallots, thyme and parm cheese
    1tsp fresh thyme chopped

Directions

heat oven to 400 degrees
place first 3 ingredients on greased foil lined baking sheet
coat with cooking spray
roast 10 minutes, season with salt & pepper if desired
sprinkle with shallots, parm & thyme and cook for another 10 min or until tender
