Coach Nicole's Chocolate Peanut Butter Oat Bars



Introduction

Number of Servings: 18

Ingredients

    2 cups oats (any kind, I use thick-cut)
    1 cup quick cook oats
    1/4 tsp salt (optional)
    1/4 tsp cinnamon
    1 Tbsp unsweetened cocoa powder
    1/4 cup maple syrup
    1/4 cup skim milk (or non-dairy milk alternative)
    1/3 cup honey
    2 Tbsp canola oil
    1/3 cup natural peanut butter


Directions

Preheat oven or toaster oven to 350 degrees F.

Process 2 cups rolled oats in blender or food processor until they become flour-like. Mix "oat flour" with dry ingredients in a bowl.

Add all wet ingredients (except peanut butter) to the dry mixture and stir until well combined.

Add peanut butter and mix well.

Spray a small baking dish (about 5 inches x 12 inches, or similar) with non-stick cooking spray. Add mixture to the dish, pressing it down with a spatula. With a knife, cut the whole sheet into 18 bars. Bake at 350 degrees for about 20 minutes or until edges of bars are lightly browned. Let cool, cut again, and store in an air-tight container for up to one week.

    Coach Nicole- do you think a tablespoon of molasses would be a good replacement for cocoa powder? I am out of cocoa and dont want to go to the store! - 4/16/11
