2 links Trader Joe's spicy Italian sausage, skins removed, diced
2 strips Oscar Mayer turkey cured bacon
1 Pint water
1 can Hy-Vee clear chicken broth
1 tsp Extra Virgin Olive Oil
1 lg russet potato
1/4 C (4T) chopped shallots (or onions)
1 C frozen spinach, thawed
1/2 C half & half
Salt & pepper
Heat Olive oil in pan. Stir in shallots. Heat until beginning to soften. Add Garlic and Potatoes. Stir and heat about 2 minutes. Add water and broth. Simmer med. low until potatoes are tender.
Add sausage and bacon and simmer for 10 minutes. Add spinach and half & half to pan & heat through. Season with salt & pepper to taste.
Serving Size: Makes 3 servings
