Vegetarian Lasagna

Hearty Lasagna Without All The Carbs Hearty Lasagna Without All The Carbs
Number of Servings: 8


    2 lrg. zucchini, sliced to resemble lasagna noodles
    16 oz. part skim ricotta cheese
    2c. fresh spinach, chopped
    2 tbsp. fresh parsley, chopped
    2 tsp. ground nutmeg
    2 egg whites
    5 cloves garlic, minced
    4-6c. Muir Glen OrganicTomato Basil Sauce, or any other flavor
    4 oz. mozzarella cheese


Preheat oven to 350.
Spray a large casserole dish w/ cooking spray.
Slice zucchini and set aside.
Combine all other ingredients except sauce and mozzarella. Mix well
Start layering the ingredients in the following order: 1c. sauce
zucchini strips
1c.ricotta mixture
Repeat this process until your pan is filled.
Once dish is filled top lasagna with mozzarella cheese.
Bake uncovered for approx. 40 min.
If lasagna seems dry, heat remaining sauce and serve over lasagna squares on the plate.
