Random Veggie and Sausage Frittata

Introduction

Great for emptying your fridge and for Brinner (breakfast for dinner)! Great for emptying your fridge and for Brinner (breakfast for dinner)!
Number of Servings: 4

Ingredients

    1 medium red bell pepper - cut into strips or diced

    1 medium white onion - cut into strips or diced

    1/2 cup chopped broccoli

    6 chicken breakfast sausage links cooked and cut into smaller pieces

    1 pat butter

    1.5 cup fresh baby spinach

    4 large eggs

    4 large egg whites

    1/2 cup 1% milk

    salt/pepper

Directions

In an oven safe skillet, saute veggies in butter until cooked through. Add cooked and cut up breakfast sausage. Whisk together eggs, egg whites and milk, salt and pepper. Pour into hot skillet and let eggs start to set. Once bottom is set, put skillet into 375* oven to finish cooking through. Remove from oven, let sit for 5 minutes and flip onto serving plate. Serve with fresh fruit and/or toast.

Serving Size: Cut into 4 equal wedges
