225g black beans (soaked overnight and rinsed thoroughly)
I medium onion, finely sliced
2 cloves garlic, chopped
I large carrot, diced
2 medium sticks celery, diced
1 tsp smoked paprika
4 sage leaves
1 pint vegetable stock made with bouillion
1/2 glass white wine
2 tbsp virtually fat free fromage frais
Blend until smooth. Add white wine and serve hot with a swirl of fromage frais.
