These muffins were made by accidentally leaving out the fat. Oops....but what a difference now in the calorie count. This recipe makes 12 LARGE muffins, with only 210 calories each. Ingredients

    Ingredients:
    *Flour, white, 3 cup
    Baking Powder, 4 tsp
    Salt, .75 tsp
    Granulated Sugar, 1 cup
    Egg, fresh, 2 large
    Orange Juice, 1.5 cup
    vanilla, 1 tsp
    Cranberries, 1.5 cup, chopped
    grated zest from one orange


Directions

Mix dry ingredients together in a large bowl. Add chopped cranberries and orange zest. Mix eggs, orange juice and vanilla until thoroughly blended. Pour into flour mixture and blend with a fork just until incorporated. Put into muffin tins sprayed with non stick spray. \Sprinkle lightly with granulated sugar. Bake at 400 degrees for about 20 minutes. Remove from pans after 5 minutes and let cool completely.

Serving Size: Makes 12 larg size muffins
