Pasta with Bruschetta Topping

Ingredients

    2 cups Whole Wheat Bowtie Pasta
    1 Container of Fresh Cherry Tomatoes
    8 oz. Fresh Mozzarella Cheese
    15 Fresh Basil Leaves
    1/4 cup Extra Virgin Olive Oil
    2 TBSP Balsalmic Vinegar
    1 tsp. Lemon Juice (optional)
    Fresh Garlic (to taste)
    Salt & Pepper (to taste)

Directions

Cook pasta as directed on box. While pasta is cooking, take a large bowl (large enough to fit all ingredients) and mix together the oil, vinegar, lemon juice, garlic, salt and pepper. Mix well, then set aside. Halve cherry tomatoes, cube cheese to approx. same size as tomatoes, and chop the basil. When pasta is finished cooking, drain and pour into the bowl where the oil mixture is waiting. Thoroughly coat the pasta, then add the tomatoes, cheese, and basil, and toss together. Can be served hot or cold and reheats well. Makes about 6 good sized servings as a side dish, or approx 3 good sized servings as a meal.
