Vegan Lentil Enchilada Casserole

Introduction

You need The Ultimate Uncheese Book to make this casserole- The flour and Nutritional Yeast, as well as the soy milk and Olive Oil are ingredients to make a "cheese" sauce in it--you mix dry in a saucepan (add paprika, garlic pwder, and onion powder and a tsp of mustard) Whisk in oil and milk, then cook, stirring, until desired thickjness, then set aside. Ingredients

    * *Goya Lentils (dried), 2 cup (remove)
    * *Corn Tortilla - 6" Great Value - 2 Tortillas, 6 serving (remove)
    * *Enchilada Sauce (Old El Paso Mild), 1.5 cup (remove)
    * *100% Natural Hunt's Tomato Sauce, 0.5 cup (remove)
    * *nutritional yeast, 8 tbsp (remove)
    * *all purpose flour, .5 cup (remove)
    * *365 100% Italian Extra Virgin Olive Oil, 4 tbsp (remove)
    * *Dairy, Eden Soy Milk, unsweetened 1 cup, 2 serving (remove)
    * *Beans, Refried HT Fat Fat Free, 0.5 cup (remove)

Directions

Cook lentils and cheeze sauce and set aside. Cut 9 of the tortillas in half...Mix enchilada sauce with tomato sauce....spread thin layer of sauce on bottom of rectangular baking pan. layer 1/3 of tortilla pieces (I used a whole one in the middle of each layer) Then top with 1/2 of the lentils, then 1/3 of cheeze sauce, then some more enchilada sauce mix. Another layer of tortillas, rest of lentils, all refried beans, then 1/3 of cheeze. Last layer of tortillas, then the rest of the enchilada sauce mix and top with the rest of the cheeze. Bake 350 for 1 hour, loosely covering for the first 45 min.
