Banana Nut Oat Muffins

Introduction

A tasty way to use up ripe bananas. A tasty way to use up ripe bananas.
Number of Servings: 18

Ingredients

    1 cup Apriva (Kroger Brand Splenda)
    1/3 cup Butter, softened
    2 Large eggs
    1 1/2 cups Ripe bananas, mashed
    1/3 cup Water
    1 cup All purpose flour
    1 cup Quaker old fashioned oats
    1 tsp. Baking soda
    1/2 tsp. Baking powder
    1/2 tsp. Salt
    1/2 cup Walnuts, chopped


Directions

Preheat oven to 350. In a large mixing bowl blend Splenda and butter. Blend in eggs. Blend in banana and water. Add flour, oats, baking soda, baking powder and salt. Mix just until moistened. Stir in nuts. Spoon evenly into 18 cupcake tins lined with paper cups. Bake for 35 minutes or until toothpick inserted in center comes out clean. Let cool for 5 minutes. Remove from pan and let cool completely.
