Spanikopita in a Pan

Introduction

Ingredients

    whole eggs
    spinach cooked
    feta cheese
    phyllo dough
    lemon pepper spice
    garlic powder spice

Directions

I like to spray the bottom of a lasagne pan & then put on a couple layers of the phyllo dough on the bottom.

I add the eggs into a bowl & mox in cooked chopped spinache , feta crumbled & the spices...wisk & then add over the phyllo dough in the pan. I top with 2-3 layers of the phyllo dough...spraying with a bit of olive oil or canola( in a spray pump) in between the phyllo sheets so they crisp up when baking. I also spinkle a bit of lemon pepper spice on top of the whole thing just before putting in a preheated 350 deg oven for approx 30 min or till a knife comes out clean when inserted into the egg & the phyllo dough ontop is nice & crisp & light brown.

I always feel like I am having Sanikopita at a greek restaurant....mmm yummy! I actually got the idea from watching Sandi Richard who does the "Fixing DInner" or used to do it on TV. They had a recipe like this on once & I copied it & have made it ever since...my family loves it & so do I. Enjoy!

You can also add other veggies to it & other types of cheese.....if you do u may have to increase the eggs though. Have fun with it & try different things.
