cooked and shredded chicken breast (9oz)
cheddar cheese 1/2 C
enchilada sauce 1 can ( 500 grams)
green chili 1 can
Reduced fat sour cream 1/2 C
tortillas 8 (7-8 in diameter)
Cover tortillas with paper towel and heat in microwave.
Place chicken mixture in tortilla and wrap like a burrito placing seam side down on a 9x13 pan. Pour remainder of enchilada sauce and top with remainder of cheese.
Bake at 350 for 20 min or until cheese is melted.
Serves 8 (serving size one enchilada)
Top with shedded lettuce and salsa if desired
