Slow Cooker Pork Roast or Chops

Introduction
A family favorite that takes no time at all--except for in the slow cooker! A family favorite that takes no time at all--except for in the slow cooker!Number of Servings: 8
Ingredients

1 large onion, sliced
32 organic baby carrots, full or sliced
2 1/2 pounds boneless pork roast or 8-5oz. chops
1 cup hot water
1/4 cup white sugar or sweetener
3 tbsp red wine vinegar
2 tbsp soy sauce
1 tbsp organic ketchup
1/2 tsp black pepper
1/2 tsp salt
1/4 tsp garlic powder
1 dash hot pepper sauce, or to taste
Directions
Arrange onion slices evenly over the bottom of the slow cooker, and then place pork on top of the onion.
In a bowl, mix together water, sugar, vinegar, soy sauce, ketchup, black pepper, salt, garlic powder, and hot sauce; pour over pork.
Add baby carrots.
Cover, and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
*This recipe goes great with sugar snap peas and a baked potato with butter substitute spray.

I cut the water back to 1/2 cup and added a 1/4 cup of red wine (it was 1/4 less liquid than called for). I used Balsamic Vinegar and Brown sugar instead of white. I also added some celery stalks for extra flavor...I replaced Garlic Powder with Fresh Garlic- 2 crushed cloves. We enjoyed it. - 6/10/10

Smelled so good that I had to sneak a taste as I was slicing this for dinner later this eveing. Great flavor! and will for sure make again.
Only thing I left out was the carrots because I didn't have any.

This was EXCELLENT! My husband and I just LOVED it, and my daughter enjoyed it very much too! Loved the flavour, and how the carrots and onions picked it up! The porkchops were super moist, and flavourful too!
I didn't have red wine vinegar, so I substituted with regular vinegar, no problem! - 12/7/07

I like the substitution of brown sugar for refined. I also went with minced garlic rather than powder. Reducing the recipe for two porkchops instead of 8, I put 2 medium diced potatoes on the bottom with a dozen baby carrots and 1/4 of the sliced onion, and I added 1/2 cup of fresh cranberries. - 3/17/13

I was looking for a lower sodium recipe for the way I do pulled pork. (So easy: I just put a bottle of bbq sauce over the roast and it comes out so yummy!) But this was no better. What was the point of the carrots? They were too mushy to eat. I think I will just look for a lower sodium bbq sauce. - 3/14/11
