Vegan Caesar Dressing



Introduction

This is a great Caear Dressing that is great for salad. Tastes just like the original, but without all the crap! It's vegan too! If you aren't vegan, which I am not, you can make substitutions for example, with the Parmesan Cheese.

All the ingredients I used in this are organic as well.

Number of Servings: 8

Ingredients

    4 oz of Tofu (I used the brand Silken and it can of any kind ex, firm, extra firm)
    6 Tbsp of Lemon Juice (approximately 2 lemons squeezed)
    6 Garlic Cloves
    2 Tbsp of vegan Parmesan Cheese (or non-vegan)
    1/2 tsp of Dijon Mustard
    2 teaspoons vegan Worcestershire sauce (or non vegan)
    1/2 tsp fine sea salt
    1/2 tsp pepper
    1/4 tsp kelp powder (optional, to give it an anchovy flavour)
    1/3 cup extra virgin olive oil



Directions

In a food processor, combine the tofu, lemon juice, garlic, cheese, mustard, Worcestershire sauce, salt, pepper, and kelp powder, and process until smooth. With the motor running, slowly drizzle in the olive oil.

Use immediately, or cover and refrigerate for up to 1 week.
