Cake - Lemon Flan

Number of Servings: 8

Ingredients


    Water Crackers (or Graham Crackers) 100 gram(s)
    Granulated Sugar, .25 cup
    Spread/Margarine - Lite 50 gram(s)
    Greek Yoghurt (thick) 150ml
    Milk - Lite sweetened condensed 150 gram(s)
    Lemons 2
    Gelatin 1 tsp
    Water, hot .25 cup (8 fl oz)

Directions

Biscuit base: crush biscuits, add margarine/spread and sugar, mix well.
Press firmly into prepared flan dish. Bake for 8 minutes, remove and set aside to cool.

Filling: Combine yoghurt, condensed milk, lemon juice & zest of the 2 lemons, mix well. Add gelatin to hot water, stir to dissolve then add to the filling mix.

Pour filling into cool base and chill 2 to 3 hours or overnight. Decorate with extra lemon zest and slices.
Enjoy!
