350 grams boneless, skinless chicken thighs
1 tbsp coconut oil, melted
3 tbsp all fruit spread
2 tsp minced or crushed ginger root
2 tsp crushed garlic
1/4 cup low sodium chicken broth.
Place chicken in a small baking dish. Combine remaining ingredients in a small bowl. Pour over the chicken.
Bake uncovered for 25-30 minutes.
Can turn broiler on for a few minutes for extra browning if desired.
