Introduction

These are lovely light breakfast muffins, with a basic oat muffin recipe spiced up with yummy fruit :) Slightly naughty if you add chocolate... If you want fat free or close enough substitute the stork (veg fat) for apple sauce, which will also give a different taste. Number of Servings: 24

Ingredients

    2 cups- semi skimmed milk
    2 cups - natural oats
    2 cups - flour
    2 medium eggs
    1/2 cup of sugar- I use half and half
    3tsp baking powder
    3tsp lemon zest
    3tsp orange zest
    3tsp orange juice (fresh)
    3tsp lemon juice

    optional chocolate - 100g

Directions

1. mix the oats and the milk together in a bowl leave for 15 minutes for the oats to absorb the milk.
2.In the meantime melt the fat in a pan - leave to cool slightly - then add to the oat mixture.*
3. Add the sugar to the oat mixture.
4.Whisk the eggs together in seperate bowl - add to the oat mixture.
5. Add the lemon and orange zest and peel to the oat mixture and fold in.
5. Sieve in the flour and baking powder and fold until just combined.
6. Tablespoon the batter into muffin cases or a greased muffin tin.
7. Bake on the middle shelf for 15-18mins at 200c
8.When they are ready they should be golden and when pricked with a knife, should come out clean.


* If you do not want to use vegetable fat you can use the same amount of oil, apple sauce- but you do not need to melt these.
