3 Cheese Pumpkin Cheesecake - 6 mini loaves


Number of Servings: 24


    2 Cup Cottage Cheese, beaten
    16 oz Neufchatel Cheese
    2 tubs Philly Soft Cream Cheese
    3/4 Cup Eggnog
    1/2 Cup Splenda
    6 TBL PotatoStarch (or Cornstarch/flour)
    3 Large Eggs


Preheat oven to 350 degrees

For filling, beat cottage cheese on high speed until almost smooth - about 5 minutes. Set aside.

Mix Sugars with your starch and then add them as you
Beat Cream Cheese & Neufchatel until light & fluffy - about 3 minutes on slow-med speed.

Beat in eggs, one at a time, only til blended - do not over beat.

Stir in yogurt - I like the Strawberry-Banana for this.

Spoon into greased pan or greased springform pan - I use Pam and prefer the butter flavored.

Bake @350 for 50-60 minutes or till done - should be firmer looking than regular cheesecake. When browned, it should be done.
