Eggs Benedict Casserole

Number of Servings: 10

Ingredients

    6 Thomas light multigrain English muffins
    8 hard-boiled eggs
    1 pkg. Canadian bacon
    1 cup light sour cream
    1 cup light mayonnaise
    2 tsp. lemon juice
    2 tsp. mustard

Directions

You can do these steps ahead:
Toast the English muffins and cut into 6-8 pieces
Boil 8 eggs
Dice the Canadian Bacon

The morning of :
Preheat over to 350.
Heat sour cream, mayonnaise, lemon juice and mustard. Add Canadian Bacon and sliced eggs. Keep warm.

Put the English muffin pieces in an oiled 8x13 casserole dish. Add the topping. Warm for 15 minutes or so.

Serves 8-10. Enjoy!
