Escarole And Beans

Introduction

Super easy, yummy and high in fiber. Super easy, yummy and high in fiber.
Number of Servings: 10

Ingredients

    1 hd escarole, rinsed and coursley chopped
    3 tbs EVOO
    1 med onion, sliced
    4 cloves garlic, pressed
    red pepper flakes, to taste
    s & p, to taste
    2 cans cannelini beans, rinsed and drained
    1/2 can chick broth

Directions

Heat oil, saute onion and garlic til tender and opaque 7 min or so
Season to your taste
Add beans and simmer 5 min or so
Add chopped escarole and 1/2 can broth, cover
Simmer 10-15minutes or until as soft as you like, stirring frequently

Serving Size: Makes 10 1.5 cups
