Mayan Chili with Grassfed Ground Beef, Low Fat and Gluten Free!

Introduction

My 9 yr. old daughter cannot have gluten, so we like to make a lot of soups and chili so we can control the ingredients. Be sure your spices are labeled gluten free! And by the way, this is a NORMAL chili recipe that HAPPENS to be gluten free, so it tastes great :) Any of the spices can be changed to your liking, but the salt and sugar needs to stay in to chemically bind with the acid in the tomatoes. You may mix the spices ahead of time, which we do to keep a quick chili mix on hand as well as cooked and frozen hamburger meat. The canned items are approximate sizes so just get as close as possible and you'll be fine....enjoy! Ingredients

    Ingredients:
    Ground beef, extra lean, 2#s
    Onions, raw, .5 cup, chopped
    Green Peppers (bell peppers) .5 cup, chopped
    Red Peppers .5 cup, chopped
    Sliced Potatoes, canned or diced, 15 oz. (drained)
    Crushed Tomatoes, 29 oz can
    Strained Tomatoes, 29 oz approx
    Beans, red kidney, 30 oz can approx (drained)
    Garlic powder, 1 tsp
    Chili powder, 4 tbsp
    Granulated Sugar, 1 tsp
    Oregano, ground, 1 tsp
    Pepper, black, 1 tsp
    Parsley, dried, 1 tbsp
    Cinnamon, ground, 1 tbsp
    Salt, 1.5 tsp

Directions

So easy!
*Brown the extra-lean ground beef in large soup pot (no draining needed!)
*Add: Onions
Green Pepper
Red Pepper
Strained Tomatoes
Crushed Tomatoes
Kidney Beans
Sliced Potatoes
Spices, Salt, Sugar
Simmer until onions, peppers are al dente (firm to the bite but not crunchy.
Please note that number of servings as well as serving size can change due to using different grades of ground beef, sizes of cans for vegetables, fresh or frozen vegetables, or adding water.
