Barbecued Black Beans and Veggies

Ingredients

    Onions, raw, 1 small (remove)
    Carrots, raw, 1 medium (remove)
    *Potato, raw, 2 small (1-3/4" to 2-1/2" dia.) (remove)
    Tomato Paste, 0.125 cup (remove)
    Hunt's Ketchup, 1 tbsp (remove)
    Honey Mustard, 3 tsp (remove)
    Soy sauce (tamari), 1 tbsp (remove)
    Maple Syrup, 1 tbsp (remove)
    Granulated Sugar, 1 tsp (remove)

Directions

Cook onion at medium high for five minutes,
add potato, eggplant and carrot (all cubed), add .5 cup of water, allow to cook off
Add all other ingredients, stir together
Add another half cup of water, allow to cook off at low-medium heat (until potatoes are soft)

Serve with flour tortillas or lettuce wrap
