Curry Chicken Salad

Curry Chicken Salad

Introduction

Easy chicken salad with BIG flavor, and high protein. Sweetness of the apples/raisin balances out the spice of the curry and cayenne. Easy chicken salad with BIG flavor, and high protein. Sweetness of the apples/raisin balances out the spice of the curry and cayenne.
Number of Servings: 6

Ingredients

2-10 oz. cans of 98% fat free chicken breast
(OR 20 oz. equivalent in cooked chicken breasts)
    1 medium apple, chopped
    2 stalks celery, chopped fine
    1/3 c. raisins (unpacked)
    2 T. chopped walnuts

1 cup fat-free plain greek yogurt (I used Chobani)
    1.5 T. yellow curry powder
    1/4 tsp Tumeric (optional)
1/4 tsp Cayenne Pepper (or to taste)
    Salt & Pepper to taste

*Recipe is easily adaptable with whatever fruits/nuts/dried fruits you have on hand! Try with grapes, craisins, pecans or cashews for variety.

Directions

Drain and rinse canned chicken breast and shred with fork.

In a medium bowl, combine chicken, chopped apple, celery, rasins, and walnuts. In a small separate bowl, mix greek yogurt with spices, and then combine with other ingredients.

Serve immediately, or chill for flavors to blend. (I like to make extra for leftovers the next day!) Enjoy in a whole-wheat wrap, or on bread or alone.

Serving Size: Makes approx. 6 - 1/2 cup servings

  • Thanks for sharing! I just had this for lunch on a whole wheat roll-up. It was yummy and filled me up! I like the crunchy sweetness that the apples add to the salad. The greek yogurt made me not miss mayo at all. - 5/21/11
