2-10 oz. cans of 98% fat free chicken breast
(OR 20 oz. equivalent in cooked chicken breasts)
1 medium apple, chopped
2 stalks celery, chopped fine
1/3 c. raisins (unpacked)
2 T. chopped walnuts
1 cup fat-free plain greek yogurt (I used Chobani)
1.5 T. yellow curry powder
1/4 tsp Tumeric (optional)
1/4 tsp Cayenne Pepper (or to taste)
Salt & Pepper to taste
*Recipe is easily adaptable with whatever fruits/nuts/dried fruits you have on hand! Try with grapes, craisins, pecans or cashews for variety.
In a medium bowl, combine chicken, chopped apple, celery, rasins, and walnuts. In a small separate bowl, mix greek yogurt with spices, and then combine with other ingredients.
Serve immediately, or chill for flavors to blend. (I like to make extra for leftovers the next day!) Enjoy in a whole-wheat wrap, or on bread or alone.
Serving Size: Makes approx. 6 - 1/2 cup servings
