Ingredients

* *Flour, white, 17 cup
* Saf-Instant, 48 gram(s)
* Move Over Butter, 5.33 tbsp
* Mashed Potatoes, 1 cup
* Water, tap, 5 cup (8 fl oz)
* Salt, 4 tsp
* Granulated Sugar, .5 cup
* Water, tap, .5 cup (8 fl oz)
* Granulated Sugar, .5 tsp
Directions
Makes 6 loaves. For nutrition I figured on 1/2" slices.
dissolve in 1/2 c. warm water the saf-instant (yeast), and 1/2 tsp. sugar. Let stand 5 min. Combine in large pan:
1/3 c. shortening
5 c. potato water (When I forget to save the water I use left over potatoes 1 cup potatoes 4 c.water)
8 c. flour
4 tsp. salt
1/2 sugar
Add yeast mixture and beat 150 strokes. Add enough flour (about 8 more cups) to make a soft stiff dough. Knead 5-10 min. Let rise until double (about 1 1/2 hrs. at 85 deg). Knead down. Let rise about 1/2 hr. Shape into 6 loaves using a 9x5x3 pans. Cover with a damp cloth and let rise in a warm place until double (about 50 min.) Bake on bottom rack of oven 30 min. at 400. For some reason it rises faster for me that the original recipe.
