Confetti Rice Salad

Introduction

Red rice is high in fiber. Those looking to lower their cholesterol will enjoy this tasty salad. Red rice is high in fiber. Those looking to lower their cholesterol will enjoy this tasty salad.
Number of Servings: 8

Ingredients

    1 c. cooked, cooled red rice
    1 c. cooked, cooled short grain brown rice
    1c. organic frozen corn, thawed
    1c. reduced sodium black beans
    1/2 red pepper diced
    1bunch of scallions, chopped
    1/4 c. parsley, chopped

    Dressing:
    1/4c. white wine vinegar
    1 tbsp olive oil
    1/2 tsp. cumin
    1/4 c. cilantro, chopped

Directions

Combine all dressing ingredients and wisk together until blended well.

Mix all remaining ingredients together then add dressing.

Toss together and serve.

Makes a great meal with grilled salmon and steamed asparagus.

serving = 1/2c.
