Lo-carb Strawberry Rhubarb Dessert

Introduction

Number of Servings: 6

Ingredients

    Rhubarb, 3 cups, 1/2 inch sliced
    Cinnamon, 1/2 tsp
    Water, 3 tbsp
    Sugar Free Strawberry Jello, 3oz pkg
    Truvia, 1/2 cup

Directions

Bring rhubarb, cinnamon, and water to boil in saucepan. Reduce heat, cover, and simmer about 10 minutes until rhubarb tender. Add jello and truvia, stir until dissolved. Pour into cups and refrigerate. Serves 6.

  • The water amount must be wrong. 3 til would never boil with rhubarb let alone simmer for 10 mins. I tried 3 cups. We shall see - 6/7/14

    It has been a long time since I made this- but I remember thinking the same thing when I tried it. I believe the water from the rhubarb comes out and it really did work. Hopefully your way worked for you too. :)
