Banana Bread with Flax Meal (big batch)

Introduction

Ingredients

    DRY:
    2 cups unbleached flour (use less if you want a very moist bread)
    2 cups whole wheat flour
    1/2 cup flax meal
    1 Tbsp baking powder
    1 tsp baking soda
    1/2 tsp groud cinnamon
    1/4 tsp ground nutmeg
    WET:
    4 eggs
    3 cups over-ripe mashed bananas (about 10 med)
    1 1/4 c. agave nectar
    1 c. canola oil
    ADD LAST:
    1 c.chopped walnuts

Directions

**Recipe written for high elevation (8,500 ft), so you may need to use 1/4 or 1/2 c.less flour, and 3 tbsp more agave, and bake at 350**.
Mix wet and dry ingredients seperately, then combine just until mixed and add walnuts. Pour into well greased loaf pans (will need 3 or 4). Bake at 365 degrees for approx 50-55 min, or until toothpick comes out clean. I recommend covering loaves lightly with foil the last 10-15 min of baking so they do not over-brown. Allow to cool on rack slightly before removing from loaf pans(5-10 min). Allow to rest several hours before slicing, or bread will crumble. Keeps well in the fridge or freezer if wrapped.

Serving Size: makes 3 lrg loaves or 4 medium sized
