Introduction

This is a delicious, summery low calorie/carb recipe from www.seriouseats.com which is a great way to use up leftover chicken. Thanks to the avocados, it contains a healthy portion of monosaturated fats which lower your cholesterol. Number of Servings: 4

Ingredients

    2 cups chopped or shredded chicken (12 oz)
    2 avocados, ripe--peeled & diced
    2 lg tomatoes, seeded and diced
    1/2 red onion or 1 bunch scallions, chopped
    4 T cilantro, chopped (opt)
    2 limes
    salt & pepper to taste
    garlic salt or minced garlic (opt)

Directions

Combine chicken and chopped veg in one large bowl. Squeeze liberally with lime (which will keep the avocado from turning brown). Season with salt and pepper (& garlic powder). Mix gently so the avocado retains its shape as best it can.

I serve this on top of spinach with julienned red pepper and sliced cucumbers, whole wheat bread on the side. It's also good as a sandwich or pita filling, or picnic food.
