800 g chicken, cut into serving portion
1 1/2 tbsp curry powder
1 tbsp canola oil
4 cloves garlic, minced
1 medium onion, sliced
4 small tomatoes, sliced
2 chicken bouillon cubes
2 cups coconut milk
3 medium potatoes, peeled and quartered
Heat oil, and saute onion, garlic and tomatoes. Add chicken bouillon cube and marinated chicken. Cook until chicken turns light brown.
Pour coconut milk and simmer until chicken is tender and cooked through. Add potatoes and continue simmering until fork-tender. Serve on a bed of rice.
