Pumpkin Seed Trail Mix

Introduction

This is a variation on Claire Robinson's Pumpkin Seed and Dried Cherry Trail Mix from her cookbook. I added candied ginger and some chocolate chips just for a little extra zing. This is high calorie in large amounts, but is perfect in small amounts for giving you a little boost of energy or topping a yogurt parfait. Number of Servings: 24

Ingredients

    1 cup slivered almonds
    2 cups hulled sunflower seeds
    1 cup pumpkin seeds
    6 tbsp real maple syrup (not pancake syrup!)
    1 tsp sea salt
    1 cup dried cranberries
    1 oz chopped candied ginger (about 1/4 c)
    1/2 cup chocolate chips (I use semisweet).

Directions

1. Preheat oven to 300F.
2. Combine seeds, nuts, salt, and maple syrup. Spread out on a lined baking sheets. Bake 20-25 minutes, until golden brown, stirring occasionally.
3. Let cool completely. Once cool, add fruit and chocolate chips.

Serving Size: Makes 24 1/4 cup servings.
