4.5 cups finely chopped peaches
2 Tbsp fresh lemon juice
3 cups sugar
1 box Sure Jell No sugar needed Fruit Pectin
Measure exact amount of fruit into a 6 or 8 quart saucepot. Stir in lemon juice. Measure exact amount of sugar into a seperate bowl.
Mix 1/4 cup fugar from teh measured amount and 1 box of Sure-Jell ina small bowl.
Stir pectin sugar mixture into friut in saucepot. Add 1/2 teaspoon butter or margarine to reduce foaming, if desired.
Bring mixture to a full rolling boil on high heat, stirring constantly.
Stir in remaining sugar quickly. Return to a full rolling boil and boil EXACTLY 1 minute, stirring constantly. Remove from heat. Skim off any foam.
Ladle quickly into prepared jars.
