Introduction

Number of Servings: 4

Ingredients

    1lb lean ground beef
    1/2 cup of chopped onion
    1/2 cup of chopped green bell pepper
    1/2 of a 6 oz can of tomato paste (add more or less based on your taste)
    1 egg
    1/2 teaspoon of salt and 1/4 teaspoon of pepper
    *optional you can add 1/2 cup of instant or rolled oats to hold it together better, but being on Akins I left it out for now.

Directions

mix ingredients in a bowl and put in a baking dish, shape like a loaf, bake for 1 hr at 375 degrees
*optional you can mix 1/3 cup of ketchup, 1 tbsp of dijion mustard and 2 tbsp of brown sugar and slather on top of loaf before you put it in the oven.
This in not my recipe, I got it from Paula Deen...I only modified it a little to my needs.
