Tilapia with Almonds and Cherries

Introduction

Makes you feel like you're eating out at nice restaurant. It's light and satisfying. Makes you feel like you're eating out at nice restaurant. It's light and satisfying.
Number of Servings: 4

Ingredients

    1 T Almonds, toasted
    4 (4 oz) Tilapia fillets
    1 small onion
    1 tsp thyme
    1 oz. of dry white wine or vermouth
    1/2 c. frozen sweet cherries
    1/3 c. chicken broth
    Salt & Pepper to taste

Directions

Toast the almonds until fragrant and slightly browned. Salt and pepper the tilapia.
Heat the oil in a pan. Add tilapia. Cook until firm and browned. Flip over and do the other side. Remove from pan. Add onion and saute until transluscent. Add the wine. Wait about 2 min then add thyme and cherries. Cook for about 30 sec. and then add the broth. Simmer until reduced about a third. Spoon over tilapia and sprinkle with almonds.

Serving Size: Makes 4 (4 oz) fillets with 1/3 c. of Sauce
