Chicken-Rice Casserole with Mozzarella


Number of Servings: 12


    6 t. Olive Oil
    1.5 c. chopped onion
    1 clove garlic, minced
    2 medium red bell peppers
    2 c. frozen broccoli, thawed
    1 medium tomato, chopped
    1 c. spinach, fresh
    3 c. Reduced Sodium chicken broth
    4.5 t. dried thyme
    3/4 t. freshly ground black pepper
    8 servings brown rice
    3/4 c. plus 1/3 c. nonfat greek yogurt
    6 T. Dijon Mustard
    1.5 lb . skinless, cooked chicken or smoked chicken, diced
    8 oz. part-skim mozzarella cheese, shredded
    3/4 c. chopped parsley


Preheat the oven to 425. Spray a 5 qt. casserole with nonstick cooking spray. In a large nonstick skilled over medium-high heat, warm the oil until hot but not smoking Add the onion and garlic and cook, stirring, until the onion begins to brown, 3 to 5 minutes. Add the bell peppers, broccoli, tomato, spinach, thyme and black pepper, and 3/4 c. of the broth and continue cooking until the bell pepper begins to soften, 3 to 5 minutes. Stir in the remaining broth, the rice, sour cream and mustard. Add the chicken, remove from the heat, and stir until well combined. Stir in one third of the mozzarella and the parsley. Transfer the mixture to the prepared casserole. Spread the mixture evenly. Sprinkle with the remaining mozzarella and bake for 20 to 25 minutes, or until the casserole is heated through and the cheese is melted.
