Introduction

Ingredients

    3 tbspOlive oil
    1 large onion chopped
    4 cloves of garlic, minced
    1 package ground chicken
    1 can Black beans
    2 large cans canned tomatoes
    1 can mushroom pieces
    1 can low sodium corn
    1 chipotle pepper
    2 teaspoons of chipotle sauce for can
    2 tbsp of chili powerder to taste
    1 can sliced black olives
    1 can tomato paste

Directions

Heat large pot, put in olive oil and add onions. Cook onions until tender, add garlic and ground chicken. cook until chicken is browned and cooked through. Add Worchteshire to chicken optional 1 tsp. - 1 tbsp. Add 1 tbsp of chili power over chicken. Stir until fully mixed.
Add tomatoes and tomato paste
Add black beank
Add olives
Add Chipotle pepper and sauce
Add mushrooms
Stir everything together and simmer for 1.5 hrs or til beans are softened a bit.
Add corn at the end, simmer til corn is warmed thru.
