5 slices bacon, chopped
1 onion, diced
16 oz chicken breast - cut into 1 inch cubes
16 oz frozen cut okra
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
2 10-oz cans diced tomatoes with green chile peppers (rotel)
1 can diced tomatoes
1 cup brown rice
3 cups chicken broth
salt and pepper to taste
I changed this recipe to 1/2 lb chicken, no bacon and added smoked sausage 1/11/14 - used 2 cans diced tomato instead of chilies.
Place bacon in a medium sauce pot over medium-high heat. Cook until evenly browned; Drain on paper towels, reserving about 2 tsp grease in the pot. Add onion and chicken. Cook, stirring until chicken is slightly browned. Add remaining ingredients and bring to a boil. Reduce heat to medium-low, cover and simmer for 45 minutes, or until rice is tender. Stir in cooked bacon. Add water if it seems too dry, simmer with lid off for a while if too wet.
