Vietnamese Sauteed Bok Choy

Introduction

Ingredients

    1 Bunch of Baby Bok Choy
    2 teaspoons coconut oil
    1 Tablespoon of fish sauce (anchovy sauce, oyster sauce or similar)
    2 cloves of garlic, chopped
    salt/pepper to taste

Directions

Cut the base off of the bok choy and discard. Rinse bok choy so that any dirt or sediment that settled between the leaves has been removed.

In a skillet, melt the coconut oil and add the garlic. Sautee the garlic for about a minute and then add the bok choy, salt, and pepper.

Sautee until the bok choy is slightly wilted and stems are still crisp. Splash with the fish sauce and sautee an additional minute. Serve.
