2.85 lb John Morrell Corned Beef Brisket (ends up cooking down to 14 oz meat minus the fat)
1 T extra light virgin olive oil
2-1/2 c turnips, peeled and cubed
2 c parsnips, peeled and cubed
2 c white onion, chopped
16 oz baby carrots
6 c (1/2 LARGE head) cabbage, cubed
Spray crockpot with non-stick spray.
Put corned beef in crockpot. Add veggies. Cover and cook on low 6 - 8 hours.
