Rumbamel's Black Bean and Beef Taco Filler

Introduction

This is a new and interesting taco filler. Different from the plain ol' taco meat. YUM! This is a new and interesting taco filler. Different from the plain ol' taco meat. YUM!
Number of Servings: 8

Ingredients

    -1 lb lean ground beef, cooked and drained well
    -1 can drained and rinsed black beans (1 1/2 C)
    -1 C chopped and drained fresh tomatoes
    -1/2 C chopped onion (I use white)
    -4 t low sodium taco seasoning
    -1/2 C or 56g Sargento's Artisan Blends Authentic Mexican Shredded cheese

Directions

--Cook and drain your ground beef well. Add the onions and cook for another few minutes over med/low heat. Add the beans, tomatoes and seasonings and stir well. Cover and simmer for about 5-7 minutes stirring once.

--Add in cheese and serve warm in taco shells with lettuce and sour cream (lettuce, sour cream and shells are not in the nutrition)

--Makes 8 servings of 1/2 C each.
