West African Peanut Soup - Vegan

I know there are already several recipes with this name, however, this version is vegan friendly and is okay to use on the Daniel Fast. Number of Servings: 2

Ingredients

    2 tsp Extra Virgin Olive Oil
    1 medium yellow onion, chopped
    1 medium carrot, sliced
    2 tsp minced fresh ginger
    dash of cayenne pepper
    1 sweet potato, peeled and chopped - about 1 cup
    2 1/2 cups filtered water
    1 cup tomato juice
    1/4 teaspoon coarse sea salt
    1/4 teaspoon freshly ground black pepper
    1/2 cup natural creamy peanut butter - just peanuts, no added fats/sugars, etc. - salt ok.

Directions

Saute onion in olive oil. Add sliced carrots and saute for a few minutes. Add ginger, cayenne, sweet potato, water, tomato juice, salt and pepper. Cook for 15 or 20 minutes until sweet potato is tender. Process in food processor or Vita-Mix with peanut butter. Serve with chopped green onion, if desired.

Serving Size: makes 2 servings, about 2 cups each
